Oven temperature : 175 Celsius fan.
220g plain flour
125g icing sugar
1 jar of Crossogue Lemon Curd
300g caster sugar
juice of 2 lemons
85g plain flour
1.) Preheat oven to 175 degrees fan.
2.) Line a 9×13 baking tin with grease proof paper and either spray with cooking oil or grease with butter.
3.) Put all base ingredients in mixer or blender until you get a large crumble like consistency .
4.) Empty Base into baking tray and push down firmly with your hands until the mixture is evenly spread and compacted. place in oven for 10mins while making your topping.
5.) For topping, first put flour, sugar and Crossogue Lemon Curd in mixing bowl and combine.
6.) Add eggs and combine and then lemon juice, little by little.
7.) Pour mixture on top of your base and place back in the oven for 30 mins until top is lightly browned.
8.) Allow to cool to room temperature before dusting with icing sugar and cutting into bars
